Feta Chicken Bake
This is simple and easy recipe that is good for all three Phases of the South Beach Diet. Weight watchers 3 points per serving. |

Ingredients
6 Boneless skinless chicken breast halves (2 lbs)
2 tbsp. Lemon juice, divided
1/4 tsp Salt
1/4 tsp Black pepper
1 (3.5 oz) package Athenos Reduced Fat Crumbles Feta Cheese with Basil & Tomato
1/4 cup Finely chopped red pepper
1/4 cup Finely chopped fresh parsley
Instructions
Preheat oven to 350 degrees. Arrange chicken in 13x9-inch baking dish.
Drizzle with 1 Tbsp of lemon juice. Season with salt and black pepper. Top with cheese; drizzle with remaining 1 Tbsp. lemon juice.
Bake 35-40 minutes or until chicken is cooked through. Sprinkle with red pepper and parsley.
Cook's Notes: I prefer to cook the red pepper and parsley with the chicken instead of adding it after it is cooked.
