Stir-fried Turkey Strips and Salad
Simple and nutritious - low fat turkey and a crunchy salad. |

Ingredients - makes 2 servings
6 oz (165g) (raw weight) boneless, skinless turkey breast
2 tsp olive or canola oil
1 clove minced/chopped garlic
1/4 tsp paprika
2 cups (5 oz/140g) lettuce - Cos or Romaine are best
1 cup (4 oz/110g) sliced cucumber
6 cherry tomatoes
1 tbsp reduced-fat dressing
1 tbsp pumpkin seeds
Instructions
Add lettuce, cucumber and tomatoes to a bowl and toss with dressing.
Cut the turkey breast into thin strips and sprinkle with paprika.
Heat oil in a non-stick skillet/pan and sauté the garlic for a few minutes; add the turkey strips and cook quickly for 4-5 minutes, turning all the time.
Arrange salad on plate, sprinkle with pumpkin seeds and place turkey strips on top.
